Summer Sandwich Options

With summer upon us, I find that cooking a heavy meal is just not my highest priority after work during the weekday.   My go-to summer quick fix is a sandwich and something light on the side.  Here are a few of my favorite summer sandwiches.

The cucumber, avocado and cream cheese summer sandwich:

First, pop the bread in the toaster.  Then spread cream cheese on one side of the toast. Take an avocado and chop up and lightly mash in a small container and spread on the second side of the toast.

Peel the skin on half a cucumber leaving part of the skin on for texture and color.  Then slice the cucumber to desired thickness.  Place slices of sliced cucumber on the cream cheese side of the toast.

Add some lettuce, a slice of tomato, and Mezzetta Peperoncini pepper slices to the sandwich.  Lightly sprinkle some red wine vinegar over the cucumber slices and lettuce and add salt & pepper to taste.

Ingredients
  • Four slices toast
  • Cream cheese
  • Avocado
  • Lettuce
  • Tomato
  • Mezzetta peperoncini deli-sliced peppers
  • Red wine vinegar

Summer Sandwich Option # 2- Bacon, Lettuce, Tomato and Fresh Basil Miracle Whip:

This is just an added spin to the standard BLT sandwich. Fry or microwave the desired count of bacon slices, let drain on a paper towel and add bread to the toaster.

Meanwhile, pick some fresh basil from the garden and chop and place in a small container with Miracle Whip.

My preference is to let the Miracle Whip and chopped fresh basil sit for 15-20 minutes in the refrigerator to intensify the flavor.  Spread the mixture on both sides of the toast and add the bacon, lettuce and tomato slices.

Then place the two pieces together and you have a summer flavored BLT.

    The BLT, if you put the mayo mixture on the outside of the bread, add a slice of swiss or provolone, maybe even muenster to the inside, then toast the outside of the both sides of the bread in a skillet on the stove or in a panini press. Wallah, a grilled BLT!!
